Jillian's locations as of December 2009 include the original location in Boston, MA as well as Albany, NY; Charlotte, NC; Columbia, SC; Cleveland Heights, OH; Indianapolis, IN; Manchester, NH; Norfolk, VA; San Francisco, CA; Seattle, WA; Universal City, CA; Worcester, MA; and Youngstown, OH.Jillian's was founded in 1985 as a billiards club located near Fenway Park in Boston, Massachusetts.

Within several years, the owners opened another branch in Seattle, Washington.

The club was "named" for a woman named Gillian, who was then the spouse of the establishment's founder.

As of December 2009, some locations including those in Albany, NY and Boston, MA appear to be owned and operated independently of both Dave & Buster's and JBC Entertainment; most of the locations share with Dave and Buster's the slogan "Eat, Drink, Play."Locations no longer in operation include Memphis, TN (closed sometime around January 2009) and the facility at Neonopolis in downtown Las Vegas, Nevada (closed sometime around November 2008; this location's final owner was Jillian's Management Company and the location was also used as a concert venue).

By the early 1990s, it had become a competitor of Dave & Buster's, expanding its locations to include restaurants, video games, bowling alleys, nightclubs, and conference rooms.
